shouldnt this rather be called something like Too many super sayian xD
anyways there isent too much sharingan, its a strong bloodline, so ofcourse people would want to get hold of it by any means necesary, and they dont got the same protection as the Byakugan, so its alot easier to get hold of, and all sharingans that others outside the clan have been stolen (exept for kakashi, that was a gift)
bottom-line is that out of those i dont know 50 possible sharingan users before itachis massacre, alot of Uchihas could have been taken doing the massacre, and taken their sharingan, and i am saying could that dosent mean it is like that
